Ingredients
8 ounces medium shrimp, peeled and deveined
1 tablespoon olive oil
3 cloves garlic, minced
Kosher salt and freshly ground black pepper, to taste
1/3 cup mayonnaise
1/4 cup sour cream
1/4 cup shredded mozzarella cheese
2 tablespoons freshly grated Parmesan
1/2 teaspoon onion powder
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1 French baguette, ends trimmed and cut into 1/3-inch slices
1 tablespoon Cajun seasoning
2 tablespoons chopped fresh parsley leaves
Instructions
Preheat your oven to 400°F (200°C). Lightly oil a baking sheet or coat it with nonstick spray.
Place the shrimp in a single layer on the prepared baking sheet. Drizzle with olive oil and sprinkle with minced garlic. Season with salt and pepper to taste. Gently toss to coat the shrimp evenly.
Roast the shrimp in the preheated oven for 6-8 minutes, or until they turn pink, firm, and cooked through. Remove from the oven and allow to cool slightly, then dice the shrimp into bite-size pieces.
In a large bowl, mix together the diced shrimp, mayonnaise, sour cream, mozzarella, Parmesan, onion powder, thyme, and oregano. Season with salt and pepper to taste.
Arrange the baguette slices in a single layer on the baking sheet. Spoon the shrimp mixture over each slice, spreading it evenly. Sprinkle with Cajun seasoning.
Bake in the oven for 6-8 minutes, or until the cheeses have melted and the tops are golden brown.
Remove from the oven and serve immediately. Garnish with chopped parsley if desired.
