Ingredients
Shrimp
1 lb. uncooked shrimp, see notes π€
1 teaspoon Cajun seasoning πΆοΈ
1 red bell pepper, diced πΆοΈ
1 tablespoon olive oil, or avocado oil π«
Sauce
3 tablespoons butter π§
3 cloves garlic, minced π§
3 tablespoons flour πΎ
1 Β½ cups chicken broth π
ΒΎ cups heavy cream, can sub half and half π₯
1 tablespoon honey π―
2 teaspoons hot sauce πΆοΈ
10 oz. Rotel diced tomatoes with green chilies, juice reserved π
ΒΎ cup cheddar jack cheese, shredded π§
2 teaspoons lime juice π
Seasonings
2 teaspoons Cajun seasoning πΆοΈ
1 teaspoon brown sugar, I use light π¬
Β½ teaspoon EACH: mustard powder, oregano πΏ
1 pinch EACH: cayenne pepper, red pepper flakes πΆοΈ
For Serving
Lime wedges π
Fresh cilantro, roughly chopped πΏ

Instructions
Prep Work
1οΈβ£ Thaw the shrimp completely (if frozen) and pat the surface dry. Remove the shell, tail, and veins as needed. π€
2οΈβ£ Drain and reserve the juice from the diced tomatoes; you should have about ΒΌ cup. π
3οΈβ£ Combine the chicken broth, heavy cream, honey, hot sauce, and seasonings in a bowl and set aside. π₯£
Cook the Shrimp
4οΈβ£ Sprinkle the shrimp with Cajun seasoning. πΆοΈ
5οΈβ£ Heat olive oil in a large skillet over medium-high heat. Add the shrimp and diced red peppers, cooking for about 1 minute + 20 seconds per side. Transfer the shrimp and peppers onto a clean plate. Note: Theyβll continue cooking as they sit and when added back to the sauce. π€
Make the Sauce
6οΈβ£ Add the reserved tomato juice to the skillet and set the heat to medium. Use a silicone spatula to clean the bottom and sides of the skillet. Reduce the liquid by half. π
7οΈβ£ Add the butter and minced garlic, cooking for 1 minute. π§
8οΈβ£ Add the flour and stir continuously for 2 minutes, until the raw flour smell is cooked off. πΎ
9οΈβ£ Gradually add the chicken broth mixture, stirring continuously. Bring the sauce to a boil, then reduce to a gentle bubble. Add the drained tomatoes and let it simmer and reduce for 10 minutes, uncovered. π²
π Reduce the heat to low. Slowly sprinkle in the cheese, stirring continuously until melted and combined. Stir in the lime juice. π§
1οΈβ£1οΈβ£ Add the shrimp and peppers back to the skillet, stirring to combine. Add the fresh lime wedges and remove from heat. Sprinkle with cilantro and serve with rice, beans, or salad! π€π
