- 2 cups water
- 1 cup sugar, plus extra for coating

Instructions
- Step 1: Prepare the Oranges Gently wash the oranges using running water and a vegetable brush to ensure the peels are clean since they will be consumed.
- Step 2: Peel and Slice Cut a small portion off the top and bottom of each orange. Then score the peel into four sections running lengthwise and remove each section carefully. Slice the removed peels into 1/4-inch wide strips.
- Step 3: Initial Boiling Place the orange peel strips into a pot, cover with water, and bring to a boil. Drain the strips through a colander and repeat this boiling process once more to help remove bitterness.
- Step 4: Simmer with Sugar Return the boiled strips to the pot, adding two cups of water, one cup of sugar, and the optional vanilla bean. Bring to a boil, then reduce to a simmer, uncovered, for 30-35 minutes until the peels turn slightly translucent and most of the syrup has evaporated.
- Step 5: Cool and Dry Turn off the heat and allow the peels to cool in the sugar syrup for about 5 minutes. Using tongs, transfer the strips to a drying rack placed over parchment paper, letting them dry for 8-24 hours.
- Step 6: Final Coating Once dried, roll each candied peel in granulated sugar. If desired, dip them in melted chocolate and let them set until firm.
