Description

The filling, made from smooth ricotta, powdered sugar, and vanilla, is studded with mini chocolate chips, creating a perfect balance of flavors and textures.

1 lb. (16 oz) whole milk ricotta cheese (drained overnight)
10 sugar cones
3/4 cup semisweet chocolate chips (for dipping cones; optional)
1/22/3 cup powdered sugar
1/2 teaspoon vanilla extract
2/3 cup mini chocolate chips


Instructions

Drain the Ricotta:
To ensure your cannoli filling is thick and creamy, drain the ricotta cheese overnight. Place a large mesh strainer over a mixing bowl, line the strainer with a paper towel or cheesecloth, and add the ricotta. Let it sit in the fridge overnight to drain.
Dip the Cones (Optional):
If you’d like to dip the sugar cones in chocolate, melt the semisweet chocolate chips in the microwave, heating in 20-second intervals and stirring in between until smooth.
Dip the rims of the sugar cones into the melted chocolate, then place them in a glass or on wax paper to dry completely.
Make the Cannoli Filling:
In a large mixing bowl, beat together the drained ricotta, powdered sugar, and vanilla extract until well-combined and smooth.
Gently fold in the mini chocolate chips.
Assemble the Cannoli Cones:
Use a piping bag or spoon to fill each sugar cone with the cannoli filling.
Serve immediately, or refrigerate until ready to enjoy.
