Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 cup brown sugar, packed
1/4 cup apple cider
1 large egg
1 teaspoon vanilla extract
1 cup dried apples, chopped
1/2 cup caramel sauce (plus extra for drizzling)
Instructions
Preheat the oven:
Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
Mix the dry ingredients:
In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
Cream the butter and sugars:
In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add egg and vanilla:
Beat in the egg and vanilla extract, mixing until well combined.
Combine dry ingredients and cider:
Gradually add the dry ingredient mixture to the wet ingredients, alternating with the apple cider. Mix until a dough forms.
Fold in the apples:
Gently fold in the chopped dried apples until evenly distributed throughout the dough.
Form the cookies:
Drop spoonfuls of dough onto the prepared baking sheets, leaving space between each cookie for spreading.
Bake:
Bake in the preheated oven for 12-15 minutes, or until the edges of the cookies turn golden.
Cool and drizzle:
Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Once cooled, drizzle the cookies with caramel sauce and allow it to set before serving.
