Ingredients
4 apricots
1 drizzle of olive oil
1 tsp honey
Salt & pepper to taste
30 grams pine nuts
20–24 colorful cherry tomatoes
2 red spring onions
50 grams brocciu cheese
Dressing:
3 tsp olive oil
1 tsp balsamic vinegar
Fresh basil
Instructions
Halve the apricots, remove pits, and slice each half into 3-4 pieces depending on size.
Heat a pan over high heat with a drizzle of olive oil.
Add apricots, honey, and a pinch of salt; sauté for about 2 minutes until slightly firm.
Remove apricots and their juice to a plate.
In the same pan, toast pine nuts over high heat for 1-2 minutes until golden (wipe pan with paper towel if necessary).
Slice cherry tomatoes in half and thinly slice spring onions.
Mix the olive oil and balsamic vinegar for dressing.
Assemble the salad with apricots, tomatoes, onions, brocciu, and pine nuts. Season with salt and pepper as needed, drizzle with dressing, and top with fresh basil.
