Ingredients
2 tablespoons olive oil 🫒
8 ounces Carbonero Peppers, chopped – you can sub in Scotch Bonnets or Habanero Peppers 🌶️
1 medium onion, chopped 🧅
2 peaches, peeled, pitted, and chopped 🍑
1 cup apple cider vinegar 🍏
½ cup water, or more to your desired consistency 💧
1 tablespoon jerk seasoning blend 🌿
1 tablespoon brown sugar 🍯
Instructions
1️⃣ Heat a pot to medium heat. Add olive oil and heat through. 🫕
2️⃣ Add peppers and onion and stir. Cook down about 6-7 minutes, until softened. 🧅🌶️
3️⃣ Add peaches and cook another 2-3 minutes to soften. 🍑
4️⃣ Add vinegar, water, jerk seasoning, and brown sugar. Stir. 🍏💧🌿🍯
5️⃣ Reduce heat and simmer about 10 minutes to allow flavors to develop. ⏳
6️⃣ Cool and pour into bottles. 🧴
