Cereal Mix:

1 cup cereal original
1 tbsp milk powder
1 tsp salt
¼ tsp pepper
1 tsp sugar
Prawns:

½ lb prawns, trimmed, deveined, washed
1 tbsp lime juice
1 egg
3 tbsp cornstarch
¼ tsp salt
¼ tsp pepper
Vegetable oil
Assembly:

2 cloves garlic, minced
¼ cup curry leaves
2 curly chili red peppers, cut into diagonal pieces
2 tbsp unsalted butter


Instructions

Prepare a medium bowl and mix all ingredients for the cereal mix. Stir until combined.
In another bowl, mix the ingredients for the shrimp batter, except for the cooking oil. Stir until it becomes somewhat thick.
Heat the oil in a pan over medium heat. Once the oil is hot, dip the shrimp into the batter and fry them until both sides turn golden brown. Set aside.
Heat the pan again and add butter. Cook until it melts.
Add garlic, curry leaves, and red chili peppers. Cook until fragrant.
Pour in the cereal mixture, then stir and cook until the butter is absorbed and the cereal takes on a toasty, golden shade.
Add the fried shrimp and stir until the cereal sticks to them.
