Ingredients You’ll Need:

For the Meatloaf:

  • 1 ½ cups bread crumbs
  • ¾ cup milk
  • 1 kg ground beef (lean or regular)
  • 1 finely diced onion
  • 4 minced garlic cloves
  • ¼ cup shredded cheddar cheese
  • 2 tbsp tomato paste
  • 2 large eggs
  • 2 tbsp Worcestershire sauce
  • ¼ cup finely chopped fresh parsley
  • 1 tbsp classic yellow mustard
  • 1 tsp cumin powder
  • ½ tsp ground black pepper
  • 1 tsp salt (or to taste)
  • 250 gm cubed cheddar cheese

For the Glaze:

  • ½ cup ketchup
  • ¼ cup tomato paste or passata
  • 2 tbsp honey
  • 4 tbsp white vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp cumin powder
  • 1 tsp paprika
  • ½ tsp cracked black pepper
Directions:
  1. Preheat and Prepare: Start by preheating your oven to 400°F (200°C). Grease a baking sheet or line it with parchment paper.
  2. Mix Ingredients: In a large bowl, soak the breadcrumbs in milk to soften them. Add ground beef, soaked breadcrumbs, onion, garlic, shredded cheddar cheese, tomato paste, eggs, Worcestershire sauce, mustard, cumin, parsley, black pepper, and salt. Mix gently just until combined to keep the meatloaf tender.
  3. Shape the Meatloaf: Stretch the meat mixture into a rectangle on the prepared tray. Place cheddar cheese cubes in the center and roll the meat up tightly from the short end, sealing the edges to prevent cheese from leaking out.
  4. Glaze and Bake: In a small bowl, mix together all glaze ingredients. Pour half over the meatloaf and spread evenly. Bake for 1 hour, then spread the remaining glaze and bake for another 15 minutes.
  5. Cool and Serve: Allow the meatloaf to cool for 10 minutes before slicing. This resting period helps the juices redistribute, ensuring a moist slice every time.
