Meatloaf:
1 ½ cup bread crumbs
¾ cup milk
1 kg ground beef (lean or regular)
1 finely diced onion
4 minced garlic cloves
¼ cup shredded cheddar cheese
2 tbsp tomato paste
2 large eggs
2 tbsp Worcestershire sauce
¼ cup finely chopped fresh parsley
1 tbsp classic yellow mustard
1 tsp cumin powder
½ tsp ground black pepper
1 tsp salt (or to taste)
250 gm cubed cheddar cheese

Meatloaf Glaze:

½ cup ketchup
¼ cup tomato paste or passata
2 tbsp honey
4 tbsp white vinegar
1 tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp cumin powder
1 tsp paprika
½ tsp cracked black pepper


Instructions

Preheat your oven to 400°F (200°C). Grease a baking sheet or line it with parchment paper.
In a large bowl, soak the breadcrumbs in milk.
Combine ground beef, soaked breadcrumbs, onion, garlic, shredded cheddar cheese, tomato paste, eggs, Worcestershire sauce, mustard, cumin, parsley, black pepper, and salt. Mix gently just until combined.
On the prepared tray, stretch the meat mixture into a rectangle. Place cheddar cheese cubes in the middle and roll the meat up tightly from the short end, sealing the edges.
In a small bowl, mix together all glaze ingredients. Pour half over the meatloaf and spread evenly. Bake for 1 hour, then spread the remaining glaze and bake for another 15 minutes.
Let cool for 10 minutes before slicing.
