  • ½ cup rice vinegar
  • ½ cup granulated sugar
  • 3 cloves garlic, minced
  • 2 teaspoons red pepper flakes
  • 1 tablespoon cornstarch
  • 2 tablespoons extra-virgin olive oil
  • 1 cup finely diced yellow onion
  • 1 medium jalapeño, seeded and diced
  • 1 pound shaved roast beef
  • 1 tablespoon Worcestershire sauce
  • 7 slices white American cheese
  • Kosher salt, as needed
  • Freshly ground black pepper, as needed
  • 8 egg roll wrappers
  • 2 teaspoons diced chives, for garnish

Instructions

  1. Preparing the Sweet Chili Dipping Sauce Combine rice vinegar, sugar, minced garlic, water, and red pepper flakes in a small pot. Bring to a boil, then simmer until sugar dissolves. Once reduced slightly, mix cornstarch with water and add to the pot, simmering until sauce thickens.
  2. Making the Cheesesteak Filling Heat olive oil in a skillet, then sauté onion and jalapeño until tender. Add roast beef and Worcestershire sauce, topping with slices of American cheese. Allow the cheese to melt and season with salt and pepper.
  3. Assembling and Frying the Spring Rolls Place a scoop of filling on each egg roll wrapper and fold appropriately. Seal edges with water. Fry in heated oil until golden brown.
