4 boneless, skinless chicken breasts
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
2 cloves of garlic, chopped
1 teaspoon paprika
1 teaspoon dried oregano
Salt and black pepper, to taste
1 cup shredded cheddar cheese
1/2 cup grated parmesan cheese
3 tablespoons olive oil
Fresh parsley, chopped, for garnish


Instructions

Preheat your oven to 375°F.
In a large mixing bowl, combine chicken breasts, garlic, paprika, oregano, salt, pepper, and olive oil. Mix well to coat the chicken evenly.
Add the sliced bell peppers to the chicken and mix again.
Pour the chicken and pepper mixture into a 9×13-inch casserole dish. Make sure to spread it out evenly.
Sprinkle the shredded cheddar cheese and grated parmesan cheese on top of the chicken and peppers.
Bake for 25-30 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
Remove from oven and sprinkle with chopped parsley for garnish.
