Ingredients
1 pound chicken breasts, cut into 1×1-inch cubes
Salt and pepper, to taste
Olive oil, for cooking
1 small onion, finely chopped
2 cloves garlic, minced
1 ½ cups white long grain rice, rinsed
2 cups chicken stock
2 cups water
3 cups broccoli florets, roughly chopped
½ cup milk
2 cups sharp cheddar cheese, shredded, divided
Instructions
Season the chicken cubes with salt and pepper.
Heat olive oil in a large pan over medium/high heat. Add the chicken and brown on all sides for about 5-7 minutes, then transfer to a plate and set aside.
In the same pan, add the onion and cook until soft and translucent, about 5 minutes. Add the garlic and cook for an additional 30 seconds.
Return the chicken to the pan. Add the rice, chicken stock, and water. Stir well and bring to a boil.
Reduce heat to low, cover, and simmer for 10 minutes.
Add the broccoli, cover, and continue cooking until the rice is fully cooked, about 15-20 minutes, stirring occasionally.
Preheat the oven to 425°F (220°C).
Stir in the milk and 1 cup of shredded cheddar cheese until well combined.
Sprinkle the remaining cheese on top. Transfer the pan to the oven and bake for 10-15 minutes, or until the cheese is melted and bubbling.
Serve hot from the oven.
