Ingredients

1 large cauliflower head, sliced to 3/4 inch thick
Ghee or avocado oil cooking spray
1 Tbsp avocado oil, or olive oil
1 Tbsp dry Italian seasonings
8 oz fresh button mushrooms, sliced
2 fresh garlic cloves, minced
1 cup shredded mozzarella cheese
Sea salt and fresh ground black pepper, to taste
Fresh thyme to garnish


Instructions

Preheat your oven to 400 degrees F.
Spray baking sheets with cooking oil and arrange the cauliflower slices on them, ensuring they do not overlap.
Brush each cauliflower steak with oil, and season with salt, pepper, and Italian seasonings.
Roast for 20-25 minutes, flipping once, until golden brown.
Meanwhile, in a bowl, mix mushrooms with garlic, salt, and pepper. Spread on another baking sheet and bake for 10-15 minutes, or sauté in a pan over medium-high heat for 5-6 minutes.
Top the roasted cauliflower with cheese and mushrooms, then bake for an additional 2-3 minutes until the cheese is bubbly.
Garnish with fresh thyme before serving.
