Description

These Cheesy Fried Broccoli Bites are a delicious snack or appetizer that combines soft broccoli with three kinds of gooey cheese: Colby, Cheddar, and Velveeta. The crushed red pepper flakes add a subtle kick, while the Panko breadcrumb coating makes them perfectly crispy. Each bite is a delightful contrast between the crunchy exterior and the cheesy, veggie-filled center.

1 ½ cups fresh broccoli florets
1 cup shredded Colby cheese
1 cup shredded Cheddar cheese
4 oz. Velveeta, cut into small cubes
½ teaspoon crushed red pepper flakes
2 ¼ cups Panko breadcrumbs, divided
1 egg, lightly beaten
½ cup all-purpose flour
2 eggs, lightly beaten (for breading)
Vegetable or canola oil (for frying)


Instructions

Steam the broccoli until soft, then let it cool slightly.
Finely chop the cooled broccoli and place it in a medium to large bowl.
Add the Colby cheese, Cheddar cheese, Velveeta, red pepper flakes, ¾ cup Panko breadcrumbs, and 1 beaten egg to the broccoli. Mix well to combine.
Scoop about 1-2 tablespoons of the mixture and form it into balls.
Place the balls in the refrigerator for 1 hour to firm up.
Prepare three bowls for breading: one with flour, one with beaten eggs, and the last with the remaining Panko breadcrumbs.
Heat oil to 375°F in a large skillet, using a thermometer to monitor the temperature.
Coat each broccoli ball in flour, then dip it into the egg, and finally roll it in Panko breadcrumbs.
Fry the broccoli bites in batches, ensuring space between each one, for a few minutes on each side until golden brown and crispy.
Once fried, place the bites on a paper towel-lined tray to absorb any excess oil.
Serve the cheesy broccoli bites warm and enjoy!
