For the dough:
2 cups warm water
4 teaspoons yeast
3 tablespoons sugar
5 cups flour
1 tablespoon salt
2 teaspoons garlic powder
For the filling:
½ cup salted butter, softened
78 cloves garlic, minced
4 oz mozzarella cheese (about 1 cup)
4 oz Parmesan cheese (about 1 cup)
¼ cup fresh parsley, chopped
Garlic salt, for sprinkling
For the topping:
Sea salt flakes, optional
2 tablespoons butter, melted (for brushing after baking)


Instructions

Prepare the dough:
Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
In the bowl of a stand mixer, stir together the warm water, yeast, and sugar. Let it sit for 5 minutes until it becomes foamy.
Using a dough hook attachment, add in the flour, salt, and garlic powder. Knead for 3-4 minutes until the dough forms around the hook.
Remove the dough from the bowl briefly, spray the bowl with cooking spray, and return the dough. Cover with plastic wrap and let it sit in a warm place for 30-40 minutes until it doubles in size.
Prepare the filling:
Lightly flour your counter and tip the dough out. Roll the dough into a 1/3-inch thick rectangle using a rolling pin.
Spread the softened butter evenly over the dough. Sprinkle the minced garlic, mozzarella, Parmesan, and chopped parsley evenly on top.
Finally, sprinkle with garlic salt for extra flavor.
Form the rollups:
Roll the dough tightly like a cinnamon roll. Using dental floss, a sharp knife, or a bench cutter, slice the dough into 1 ½-inch sections (about 12-15 rolls).
Place the rolls 2-3 inches apart on the prepared baking sheets. Sprinkle with sea salt flakes if desired.
Bake the rollups:
Bake for 22-27 minutes, or until the tops are light golden brown.
Remove the rolls from the oven and immediately brush them with melted butter for extra softness and flavor.
