  • 2 cups mashed potatoes, at room temperature
  • 1 cup shredded Monterey Jack cheese, divided
  • 1/4 cup finely chopped fresh chives, plus more for garnish
  • Salt and pepper, to taste
  • Sour cream, for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 24-cup mini muffin tin with cooking spray or butter. Set aside for later use.
  2. In a large mixing bowl, combine the mashed potatoes, beaten eggs, 3/4 cup of shredded Monterey Jack cheese, and chopped chives. Stir until the mixture is well blended. Season with salt and pepper to taste.
  3. Using a small spoon or scoop, divide the potato mixture evenly among the mini muffin cups, filling each nearly to the top.
  4. Sprinkle the remaining 1/4 cup of shredded Monterey Jack cheese over each filled cup. Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the potato bites are golden brown, puffed, and set.
  5. Once baked, remove the muffin tin from the oven and allow the potato puffs to cool for about 5 minutes. Carefully remove each puff with a butter knife or small spatula. Serve warm, garnished with extra chopped chives and a dollop of sour cream if desired.
