  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup baking soda
  • 1 large egg, beaten (for egg wash)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 10 cups water (for pretzel bath)
  • 2/3 cup baking soda (for pretzel bath)
  • Coarse salt (for sprinkling)

Instructions

  1. Step 1: Preparing the Yeast Mixture In a small bowl, dissolve the sugar in warm water and then sprinkle the yeast on top. Allow it to sit for 5 minutes until it becomes foamy.
  2. Step 2: Making the Dough Mix the flour and salt in a large bowl. Stir in the yeast mixture and blend until a dough forms. Knead this on a floured surface until smooth and elastic, about 5 minutes.
  3. Step 3: First Rise Place the kneaded dough in a lightly oiled bowl, cover it with a wet cloth, and let it rise in a warm place for about an hour or until it has doubled in size.
  4. Step 4: Preparing Filling and Oven Mix together the cheddar and mozzarella cheese in a bowl. Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  5. Step 5: Shaping the Pretzels Divide the risen dough into 8 pieces. Roll each into a rope, flatten slightly, and add a tablespoon of cheese in the middle. Seal the dough around the cheese and shape into pretzels.
  6. Step 6: The Pretzel Bath Bring 10 cups of water to a boil with 2/3 cup baking soda. Boil each pretzel briefly, then place on the baking sheet.
