34 carrots, finely diced
4 cloves garlic, minced
1 tsp Italian seasoning blend (salt-free)
1 TBSP avocado oil or olive oil
3 cups vegetable broth
28 oz canned crushed tomatoes
Salt and pepper to taste
910 oz mini refrigerated cheese ravioli
1/23/4 cup heavy cream (optional)
12 cups fresh chopped baby spinach
Optional toppings: Parmesan cheese, red pepper flakes, fresh basil


Instructions

Heat the oil in a Dutch oven over medium-high heat. Add diced onions and carrots, sauté until tender.
Add garlic and Italian seasoning, sauté for 30-60 seconds.
Pour in vegetable broth and crushed tomatoes, bring to a boil then simmer.
Add ravioli and cook until tender, about 5 minutes.
