Ingredients
1 tablespoon olive oil
1 cup long-grain white rice
2 cups chicken broth
2 tablespoons butter
1 medium zucchini, shredded
1 cup shredded sharp cheddar
½ teaspoon garlic powder
Salt and pepper to taste
Splash of milk, as needed
Instructions
Heat the olive oil in a medium saucepan over medium heat.
Add the rice and stir to coat it with the oil. Toast the rice, stirring frequently, until it begins to turn golden.
Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pan, and cook for 15 minutes.
Remove the pan from the heat and immediately add the butter, shredded zucchini, shredded cheddar cheese, and garlic powder.
Quickly cover the pan again to retain the steam and let it sit for 10 minutes.
After 10 minutes, uncover the pan and stir the rice well to combine all the ingredients. Season with salt and pepper to taste. If you prefer a creamier texture, add a splash of milk and stir until fully incorporated.
