  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 tsp almond extract
  • 1 1/2 cup flour
  • 1/4 cup almond flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2/3 cup almonds (toasted and chopped)
  • 2/3 cup dark chocolate chips
  • 5 oz dried cherries

Instructions

  1. Creaming Butter and Sugars: In the bowl of a stand mixer, or with a hand mixer, cream together the butter and sugars until light and fluffy, approximately 3-5 minutes.
  2. Mixing Dry Ingredients: In a separate bowl, whisk together the flour, almond flour, salt, and baking soda. Set this mixture aside.
  3. Incorporating Egg and Almond Extract: Once the butter and sugar mixture is ready, blend in the egg and almond extract, ensuring each is fully integrated before adding the next.
  4. Combining Mixtures: Gradually add the dry ingredients to the creamed mixture, half at a time, mixing just until the dough comes together without overmixing.
  5. Adding Final Touches: Fold in the toasted chopped almonds, dark chocolate chips, and dried cherries into the dough.
  6. Chilling the Dough: Refrigerate the dough for at least 30 minutes to ensure it’s firm enough to handle.
