Ingredients

Spice Mix:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda

Wet Ingredients:

  • ⅔ cup unsalted butter, melted
  • 2 cups brown sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract

Topping:

  • 1 reserved teaspoon of the spice mixture from above
  • ¼ cup granulated sugar
  • 1 tablespoon unsalted butter, melted

Directions

1. Preheat and Prepare

Preheat your oven to 350°F (175°C). Line an 8×8″ baking pan with parchment paper or foil to prevent sticking.

2. Make the Spice Mix

In a small bowl, combine the ground ginger, cardamom, black pepper, cloves, and cinnamon. Set aside 1 teaspoon of this spice mixture for the topping.

3. Combine Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, and baking soda.

4. Mix Wet Ingredients

In another large bowl, whisk together the melted butter, brown sugar, eggs, and vanilla extract. Add all but 1 teaspoon of the spice mixture to the wet ingredients and mix well.

5. Combine Wet and Dry Ingredients

Gradually stir the dry ingredients into the wet mixture until no streaks of flour remain.

6. Bake

Pour the batter into the prepared pan. Bake for 25 minutes, or until the bars are baked but still soft in the center. Start checking for doneness at the 25-minute mark.

7. Prepare the Topping

While the bars are baking, melt 1 tablespoon of butter. Stir in the granulated sugar and the reserved teaspoon of spice mixture.

8. Top the Bars

When the bars are done baking, brush the topping mixture over them while they are still warm.

9. Cool and Serve

Allow the bars to cool completely in the pan. Once cool, slice into 12 pieces and serve.

Stir the wet ingredients into the dry until no streaks of flour remain.
Pour the batter into the prepared pan, and bake for 25 minutes. Begin checking the bars at 25 minutes; they should be baked but still soft in the center.
For the topping: Melt the butter, stir in the granulated sugar and the reserved teaspoon of spice mixture, and brush over the warm bars.
Let cool, slice, and serve.
