1 cup softened unsalted butter
1 cup golden brown sugar
1/3 cup granulated sugar
1 egg
1 egg yolk
2 teaspoons vanilla extract
1 1/2 tablespoons molasses
1 1/3 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups old fashioned rolled oats
1 cup quick-cooking rolled oats
1 cup raisins soaked in hot water
1 cup walnuts, chopped


Instructions

Preheat oven to 350°F (175°C). Soak the raisins in hot water for about 10 minutes, then drain.
In a mixing bowl, cream together the butter, brown sugar, and granulated sugar with an electric hand mixer on high speed for 2 minutes.
Add the egg, egg yolk, vanilla extract, and molasses to the bowl. Mix until well combined.
Sift the flour, baking soda, and salt into the mixture. Mix on low speed until just combined.
Stir in the rolled oats, quick-cooking oats, drained raisins, and chopped walnuts.
Line a baking sheet with parchment paper. Scoop the cookie dough with a trigger release cookie scoop, roll the balls in your hands, and place them on the baking sheet.
Bake for 8-12 minutes, depending on your desired level of doneness. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
