- 2 large chicken fillets, split lengthwise into thinner fillets; or 4 medium/small chicken fillets
- 1 tablespoon olive oil
- Kosher salt & black pepper
- 3 tablespoons butter
- 1 tablespoon chicken base (Better Than Bouillon recommended)
- 4 tablespoons all-purpose flour
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 2 cups chicken stock
- ½ cup water
- ¼ cup heavy cream (optional)

Instructions
- Prepare the Seasoning Mixture In a small bowl, thoroughly mix the flour, salt, pepper, onion powder, and garlic powder. Set this aside for later use.
- Cook the Chicken Season the chicken fillets lightly with kosher salt and pepper. Heat olive oil in a large skillet over medium heat and cook the chicken for approximately 5 minutes on each side, or until it reaches an internal temperature of 165℉. Once cooked, remove the chicken from the skillet and set it aside.
- Make the Roux Reduce the heat to medium-low. Add butter and the chicken base to the skillet, stirring until the butter is melted. Sprinkle the previously prepared flour mixture into the pan, stirring constantly to form a smooth roux. Cook for about 30 seconds to 1 minute, making sure to stir constantly to prevent burning.
- Develop the Gravy Gradually pour in the chicken stock, followed by the water, while continuously whisking to prevent lumps from forming. Scrape up all the flavorful bits from the bottom of the pan. Allow the mixture to simmer until it thickens to your desired consistency.
- Finalize the Dish If using, stir in the heavy cream to add a rich finish to the gravy. Shred the cooked chicken if desired and return it to the skillet, along with any juices that have collected. Let the mixture simmer together for a few more minutes to allow the flavors to meld. Taste and adjust seasoning if necessary.
