1 Tbsp + 1 teaspoon vegetable oil
2 1/2 cups fresh green beans
1 lb. boneless skinless chicken breast, cut into 1 inch pieces
Salt and pepper, to taste
2 cloves garlic, minced
1/4 cup low sodium chicken broth
1/4 cup low sodium soy sauce
1/2 tsp red pepper flakes
3 Tbsp honey
2 tsp cornstarch
1 Tbsp water
2 Tbsp green onions, optional for garnish
Sesame seeds, optional for garnish


Instructions

Heat 1 teaspoon of vegetable oil in a large pan over medium heat. Add the green beans and cook for about 5 minutes until tender. Remove and set aside.
Add the remaining tablespoon of oil to the pan. Season the chicken with salt and pepper and cook for 3-4 minutes on each side until golden brown and the internal temperature reaches 165°F.
Add garlic and the set-aside green beans back to the pan with the chicken and cook for 2 minutes until warmed through.
In a bowl, whisk together chicken broth, soy sauce, honey, and red pepper flakes. In a separate bowl, mix the water and cornstarch.
Pour the soy sauce mixture over the chicken and beans, cook for 1 minute. Then add the cornstarch slurry and cook for another minute until the sauce thickens.
Garnish with green onions and sesame seeds.
