3 boneless skinless chicken breasts or 6 chicken tenders ๐
1 pkg taco seasoning ๐ฎ
1/2 cup jarred salsa (I use chipotle salsa) ๐ถ๏ธ
6 oz cream cheese ๐ง
2 cups pepper jack cheese, shredded ๐ง
24 6-inch corn tortillas ๐ฝ
1/2 cup oil ๐ข๏ธ
Instructions
1๏ธโฃ In a slow cooker, add the chicken, taco seasoning, cream cheese, and salsa. Cover and cook on high for 3 hours. โณ
2๏ธโฃ Shred the chicken with two forks, then add shredded pepper jack cheese. ๐ง
3๏ธโฃ Heat a skillet with oil on medium-high heat. ๐ฅ
4๏ธโฃ Warm a few tortillas at a time in the microwave for 20 seconds to prevent splitting. ๐ฎ
5๏ธโฃ Spread 2 tablespoons of the mixture on each tortilla. Roll up and set seam side down in the hot oil. Cook until golden brown. ๐ณ
6๏ธโฃ Set on paper towels to drain. ๐งป
7๏ธโฃ Serve warm with your favorite side. ๐ฝ๏ธ
