Ingredients
2 large boneless chicken breasts, cut into strips
1 medium onion, diced
2 tablespoons olive oil
One 14 1/2 oz can diced tomatoes, undrained
1/4 cup water
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 cup baby spinach, packed tightly
Instructions
Cook the Chicken:
Heat the olive oil in a large sauté pan over medium-high heat. Add the chicken strips and cook, stirring frequently, until the chicken is browned and cooked through, about 10 minutes.
Sauté the Onion:
Add the diced onion to the pan with the chicken. Continue to cook, stirring occasionally, until the onion is soft and translucent, about 5 minutes.
Add Tomatoes and Seasonings:
Stir in the undrained diced tomatoes, water, dried basil, dried oregano, pepper, salt, and garlic powder. Bring the mixture to a boil while stirring to combine all the flavors.
Simmer:
