Chicken Burger with Feta and Spinach

Description

For the Feta Cheese Spread:
Combine all ingredients in a small bowl and microwave for 30 seconds. Stir and microwave for another 15-30 seconds if needed until smooth.
For the Tzatziki Sauce:
Mix all ingredients and refrigerate. Can be made a day ahead.
For the Burgers:
Thaw and squeeze spinach. Mix all burger ingredients and form into 4 patties.
Preheat grill to 450°F. Grill patties for 5 minutes on one side, then flip and grill for another 3-5 minutes until the internal temperature reaches 165°F.
Assemble burgers with spread and toppings on buns.

For The Feta Cheese Spread:

2 ounces feta cheese
4 ounces cream cheese
1 large garlic clove, minced
¼ teaspoon fresh ground pepper
1 tablespoon lemon juice

For The Tzatziki Sauce:

1 cup Greek yogurt (2% fat)
2 large garlic cloves, minced
¼ cup English cucumber, finely chopped
2 tablespoons dill, finely chopped
1 tablespoon fresh lemon juice
1 tablespoon extra virgin olive oil
1/4 teaspoon salt
Dash of freshly ground pepper

For The Chicken Burgers:

10 ounces frozen chopped spinach, thawed and squeezed dry
1 pound ground chicken, 93% lean
4 ounces feta cheese, finely crumbled
¼ cup almond meal or breadcrumbs
1 medium yellow onion, finely chopped
6 cloves garlic, minced
1 teaspoon salt
1 teaspoon pepper
1 teaspoon oregano
4 Brioche buns
