Ingredients:

  • 1 medium green bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 2 Tbsp. vegetable oil
  • 2 cups chopped cooked chicken
  • 1 (10.5-oz.) can cream of chicken soup
  • 1 (10.5-oz.) can cream of mushroom soup
  • 1 (10-oz.) can diced tomato and green chiles (such as Rotel)
  • 1 tsp. chili powder
  • 1/4 tsp. kosher salt
  • 2 pinches garlic powder
  • 2 pinches ground black pepper
  • 12 corn tortillas, torn into 1-inch pieces
  • 2 cups grated Cheddar cheese

Directions:

Cook Chicken Mixture

  1. Sauté Vegetables: In a large skillet over medium-high heat, add the vegetable oil. Sauté the chopped green bell pepper and yellow onion for about 5 minutes, or until they are tender.
  2. Combine Ingredients: Stir in the chopped cooked chicken, cream of chicken soup, cream of mushroom soup, diced tomatoes and green chiles, chili powder, kosher salt, garlic powder, and ground black pepper. Mix well and remove from heat.

Assemble the Casserole

  1. Layer Tortillas: Lightly grease a 13- x 9-inch baking dish. Layer one-third of the torn corn tortillas at the bottom of the dish.
  2. Add Chicken Mixture: Spread one-third of the chicken mixture over the tortillas. Repeat the layers twice more, ending with the chicken mixture on top.
  3. Top with Cheese: Sprinkle the grated Cheddar cheese evenly over the top of the casserole.

Bake the Casserole

  1. Preheat Oven: Preheat your oven to 350°F.
  2. Bake: Place the casserole in the oven and bake for 30 to 35 minutes, or until the cheese is melted and bubbly.
