- 8 corn tortillas (6 inches)
- 1 tablespoon of vegetable oil
- 8.5 ounces of corn, drained
- 1 1/2 cups of shredded cooked chicken
- 8 ounces of sauce (tomato-based preferred)
- 2 tablespoons of taco seasoning (store-bought or homemade)
- 15 oz black beans, drained and rinsed
- 2 cups of Colby Jack cheese, grated
- Fresh cilantro, for garnish
- Diced tomatoes for garnish
Instructions
- Preparing the Tortillas Preheat your oven to 400°F (200°C). Lightly brush both sides of the corn tortillas with vegetable oil and arrange them on a baking sheet. Bake for 8 to 10 minutes, flipping halfway through, until they become crispy.
- Cooking the Chicken Mixture Heat a skillet over medium heat. Add the shredded chicken, sauce, and taco seasoning, stirring them together. Cook the mixture until it is heated through, about 5 minutes.
- Assembling the Tostadas Spread the black beans and corn evenly onto the crisped tortilla shells. Next, layer the hot chicken mixture on top and finally top each tostada with grated Colby Jack cheese.
- Baking the Tostadas Return the assembled tostadas to the oven and bake for an additional 5-7 minutes, or until the cheese is completely melted and bubbly.
- Garnishing and Serving Once baked, remove the tostadas from the oven and garnish them with fresh cilantro and diced tomatoes. Serve hot.
