Ingredients
2 cups warm mashed potatoes
6 ounces cooked chicken nuggets (about 12 to 16 nuggets) (Just Bare brand recommended)
1/2 cup prepared gravy of your choice (chicken or turkey gravy recommended)
1/2 cup cooked corn
1/4 cup shredded Colby-Jack cheese
Salt and pepper, to taste
Parsley, for garnish (optional)
Instructions
Start by preparing the mashed potatoes. Use any mashed potatoes you like, such as Garlic Parmesan Mashed Potatoes or Crock Pot Creamy Mashed Potatoes. Leftover mashed potatoes work great for this recipe!
Cook the chicken nuggets according to the package instructions. Air frying is recommended for a crispy texture.
While the chicken is cooking, prepare the gravy in a small saucepan on the stovetop. A gravy packet is a quick and easy option. Cook the corn in a separate pan.
To assemble the bowls, place 1 cup of mashed potatoes at the bottom of each bowl. Evenly divide the chicken nuggets, corn, and cheese between the two bowls. Drizzle the tops with gravy.
Season with salt and pepper to taste, and sprinkle with parsley for garnish, if desired. Serve immediately and enjoy!
