- 4 chicken thighs, skins removed (bone-in or boneless)
- 8 cups chicken broth (low sodium preferred)
- 6 cups water
- 2 Tbsp olive oil, for sautéing
- 1 medium onion, finely chopped
- 2 medium celery sticks, finely chopped
- 2 carrots, sliced into rings
- 6 oz rotini pasta
- 3 Tbsp fresh or frozen dill
- 1 tsp Mrs. Dash or another salt-free seasoning
- 1 Tbsp sea salt, or to taste
- 1 garlic clove, pressed
Instructions
- Prepare the Broth In a large soup pot, combine 6 cups of water with 8 cups of chicken broth and 1 Tbsp of sea salt. Bring the mixture to a boil. Add chicken thighs and let them boil partially covered for 20 minutes. During this time, skim off any foam that forms on the surface.
- Sauté Vegetables While the chicken is boiling, heat 2 Tbsp of olive oil in a large skillet over medium/high heat. Sauté the chopped onion and celery until they are softened, then transfer them to the soup pot.
- Cook Pasta and Carrots Add the pasta and sliced carrots to the soup pot. Continue to cook at a low boil for about 15 minutes, or until the pasta reaches your desired softness.
- Shred the Chicken Remove the chicken thighs from the pot. Shred the chicken using forks or your hands, discarding any bones and excess fat. Return the shredded chicken to the pot.
- Season the Soup Season the soup with 1 tsp of Mrs. Dash or another salt-free seasoning blend. Adjust salt to taste if necessary. Press in the garlic clove and add 3 Tbsp of dill. Remove the soup from heat to let the flavors meld.
