Ingredients
3 Tablespoons olive oil, divided
1 ⅓ pounds boneless skinless chicken breasts, cut into 1-inch pieces
1 Tablespoon unsalted butter
1 16-ounce package gnocchi
1 ½ cups reduced-sodium chicken broth
12 ounces marinara sauce (your favorite brand)
½ cup grated Parmesan cheese
1 cup shredded mozzarella cheese
Fresh basil for garnish
Instructions
Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook for 6-7 minutes until fully cooked. Remove chicken and set aside.
In the same skillet, add the remaining olive oil and butter. Once melted, add the gnocchi, stirring until coated and golden-brown, about 8-10 minutes.
Pour in the chicken broth, reduce heat to medium, and simmer until the broth thickens and coats the gnocchi, about 8-9 minutes.
Stir in marinara sauce and return the chicken to the skillet. Heat through for 1-2 minutes.
Top with Parmesan and mozzarella cheeses. Broil in the oven until the cheese is melted. Garnish with fresh basil and serve.
