Ingredients
Chicken Salad:
1 whole rotisserie chicken
1/4 cup diced red onion
1/4 cup diced celery
2 tbsp minced fresh parsley
3/4 cup mayo
1/4 cup sour cream
2 tbsp fresh squeezed lime juice
Salt, to taste
Fresh cracked black pepper, to taste
Stuffed Avocado:
5 ripe avocados
Juice of 1 lime
Salt, to taste
Paprika, just a pinch
Chili powder, just a pinch
Instructions
Prepare the Chicken Salad:
Debone the rotisserie chicken and dice the meat.
In a large mixing bowl, combine chicken, red onion, celery, parsley, mayo, sour cream, lime juice, salt, and black pepper. Mix thoroughly until well incorporated.
Prepare the Avocados:
Halve the avocados and remove the pits. Scoop out a bit of the avocado flesh to create space for the filling.
Rub the avocado halves with lime juice, and season with salt, paprika, and chili powder.
Place a thin slice under each avocado half to prevent rolling.
Assemble:
Spoon about 1/3 cup of chicken salad into each avocado half.
Serve immediately or chill until serving.
