Roasted Tomatoes:
10 oz cherry tomatoes or grape tomatoes, sliced in half
2 tablespoons olive oil
3 cloves garlic, minced
Salt and pepper
Chicken Pasta:
1.5 lb chicken breast (2 skinless, boneless chicken breasts), thinly sliced
¼ teaspoon salt
2 teaspoons smoked paprika
1 teaspoon Italian seasoning
2 tablespoons olive oil
½ lemon (preferably, Meyer lemon), thinly sliced
4 cloves garlic, minced
4 tablespoons butter
8 oz spaghetti
8 oz Burrata cheese
Garnish:
½ cup fresh basil, chopped
⅓ cup pine nuts, lightly toasted


Instructions

Roasted Tomatoes: Preheat oven to 400°F. Toss tomatoes with olive oil, minced garlic, salt, and pepper. Spread on a parchment-lined baking sheet. Roast for 20 minutes.
Chicken Pasta: Season chicken with salt, smoked paprika, and Italian seasoning. Heat olive oil in a skillet, cook chicken until done, about 5 minutes per side, then slice thinly. In the same skillet, cook lemon slices and garlic in butter. Remove from heat.
Cook spaghetti, drain. Combine pasta with lemon, garlic, and butter mixture. Top with chicken and roasted tomatoes.
To Serve: Plate the spaghetti, add slices of burrata, garnish with basil and pine nuts.
