2 chicken breasts, chopped into bite-size chunks
120 ml (1/2 cup) Greek yogurt or thick natural yogurt (full fat)
2 cloves garlic, peeled and minced
1 thumb-sized piece of ginger, peeled and minced
Juice of half a lemon
1 tsp ground coriander
1/2 tsp turmeric
1/2 tsp cumin
1 tsp paprika
1/2 tsp mild chilli powder (or hot, if you prefer)
1 pinch of cinnamon
1/2 tsp salt
1/2 tsp black pepper
2 tbsp vegetable oil
To Serve:
4 chapatis
4 large leaves from a romaine lettuce, sliced into strips
170 g (1 cup) cooked basmati rice
4 tbsp Greek or natural yogurt
4 tbsp mango chutney
1 jalapeno chilli, thinly sliced
1/2 red bell pepper, de-seeded and chopped finely


Instructions

Combine chicken breast pieces with yogurt, garlic, ginger, lemon juice, ground coriander, turmeric, cumin, paprika, chilli powder, cinnamon, salt, and pepper in a bowl or freezer bag. Ensure a thorough mix, then marinate covered in the fridge for 2-3 hours.
After marination, thread chicken onto skewers. If using wooden skewers, soak them in water for at least an hour to prevent burning.
Brush skewered chicken with oil, and grill for 8-10 minutes until fully cooked and slightly charred, turning occasionally.
Assemble burritos by placing chapatis on plates, topping with lettuce, rice, grilled chicken, yogurt, mango chutney, jalapeno, and red pepper. Roll up chapati burrito-style, wrap in foil, and serve immediately.
