Ingredients
4 boneless chicken thighs, cut into 1-inch pieces
1 cup broccoli florets
3 tbsp cornstarch, divided
3 cloves garlic, minced
1/2 cup apple juice
1/2 cup chicken broth
2/3 cup soy sauce
1/3 cup brown sugar
1/4 cup ketchup
1/4 tsp ground ginger
1/2 tsp red pepper flakes
1/4 tsp black pepper
1/2 tsp salt
2 tsp apple cider vinegar
4 tbsp vegetable oil, divided
Sesame seeds, for garnish
Instructions
Season chicken with salt and black pepper. Toss with 2 tbsp cornstarch and set aside.
In a bowl, mix together apple juice, chicken broth, soy sauce, apple cider vinegar, ketchup, brown sugar, ginger, minced garlic, and red pepper flakes to create the sauce. Set aside.
Heat 2 tbsp oil in a pan over medium heat and cook broccoli until tender, about 5 minutes. Remove from pan and set aside.
Increase heat to medium-high, add remaining oil, and cook chicken pieces until golden, about 3 minutes per side. Remove from pan.
Mix 1 tbsp cornstarch with 1 tbsp cold water to form a slurry. Set aside.
Pour the prepared sauce into the pan, bring to a boil, then reduce heat and return chicken to the pan. Cook until the sauce thickens, about 10-12 minutes.
Add broccoli and the cornstarch slurry. Cook until the sauce is thickened and everything is heated through.
Garnish with sesame seeds and serve.
