Chimichurri Garlic Bread

Chimichurri
1/3 cup parsley, finely chopped 🌿
1/4 cup cilantro, finely chopped 🌿
1 to 2 red chilis (depending on size), seeds and stem removed, finely chopped 🌶️
2 teaspoons dried oregano 🍃
2 tablespoons fresh garlic, finely minced 🧄
3/4 cup olive oil 🫒
1/2 teaspoon salt, or to taste 🧂
1/2 teaspoon black pepper, or to taste ⚫
1 to 2 tablespoons red vinegar or lemon and lime juice 🍋
Other
1 16-ounce French bread loaf 🥖
1/3 cup grated parmesan 🧀
1 to 2 cups shredded mozzarella 🧀


Instructions

1️⃣ Preheat your oven to broil. 🔥

2️⃣ In a small bowl, combine all the ingredients for the chimichurri: parsley, cilantro, red chili, oregano, garlic, olive oil, salt, black pepper, and vinegar. Mix well. You can use it right away or let it sit for at least 30 minutes for even more flavor. 🥣

3️⃣ Cut the loaf of French bread in half long ways. Optionally, cut off both ends of the loaf if you don’t like them. Lay both halves on a baking sheet lined with parchment paper. 🍞

4️⃣ Mix the chimichurri well and then spread some on top of each half loaf with a light hand so it’s not too oily. Sprinkle grated parmesan on top (as much or as little as you’d like) and then add the shredded mozzarella on top. Add a little or a lot depending on how cheesy you like it. 🧀

5️⃣ Pop the bread in the oven to broil on a middle rack and watch it closely so it doesn’t burn. After 5 to 8 minutes, the cheese will be bubbly, and the edges will be golden brown and crispy. ⏳

6️⃣ Take the tray out of the oven. Cut the loaves into triangle or rectangle slices and enjoy! 🍽️
