Ingredients
Chimichurri
1/3 cup parsley, finely chopped πΏ
1/4 cup cilantro, finely chopped πΏ
1 to 2 red chilis (depending on size), seeds and stem removed, finely chopped πΆοΈ
2 teaspoons dried oregano π
2 tablespoons fresh garlic, finely minced π§
3/4 cup olive oil π«
1/2 teaspoon salt, or to taste π§
1/2 teaspoon black pepper, or to taste β«
1 to 2 tablespoons red vinegar or lemon and lime juice π
Other
1 16-ounce French bread loaf π₯
1/3 cup grated parmesan π§
1 to 2 cups shredded mozzarella π§
Instructions
1οΈβ£ Preheat your oven to broil. π₯
2οΈβ£ In a small bowl, combine all the ingredients for the chimichurri: parsley, cilantro, red chili, oregano, garlic, olive oil, salt, black pepper, and vinegar. Mix well. You can use it right away or let it sit for at least 30 minutes for even more flavor. π₯£
3οΈβ£ Cut the loaf of French bread in half long ways. Optionally, cut off both ends of the loaf if you don’t like them. Lay both halves on a baking sheet lined with parchment paper. π
4οΈβ£ Mix the chimichurri well and then spread some on top of each half loaf with a light hand so it’s not too oily. Sprinkle grated parmesan on top (as much or as little as you’d like) and then add the shredded mozzarella on top. Add a little or a lot depending on how cheesy you like it. π§
5οΈβ£ Pop the bread in the oven to broil on a middle rack and watch it closely so it doesn’t burn. After 5 to 8 minutes, the cheese will be bubbly, and the edges will be golden brown and crispy. β³
6οΈβ£ Take the tray out of the oven. Cut the loaves into triangle or rectangle slices and enjoy! π½οΈ
