These Chocolate Brownie Date Balls are the perfect blend of rich cocoa, naturally sweet Medjool dates, and crunchy walnuts, creating a snack that is both indulgent and healthy. The hint of pumpkin purée adds a seasonal twist, making these energy bites not only nutritious but also irresistibly delicious.
Ingredients
¾ cup walnuts (2.6 oz total)
10 pitted Medjool dates
¼ cup canned or homemade pumpkin purée
Pinch sea salt
¼ cup unsweetened cocoa powder (Dutch process recommended)
½ teaspoon vanilla extract
Instructions
Place ⅓ cup of walnuts in a food processor and pulse until they resemble coarse sand. Transfer to a small bowl and set aside.
Add the remaining walnuts to the food processor and process until finely ground.
Add the dates, pumpkin purée, cocoa powder, sea salt, and vanilla extract to the ground walnuts. Process until the mixture is smooth and well combined.
Using a spoon or your hands, scoop the mixture and roll into 8 golf-ball-sized portions.
Roll each ball in the reserved ground walnuts to coat them evenly.
Serve immediately or store in the fridge or freezer for later.
