Chocolate Chip Cheesecake Bars offer the best of both worlds with a creamy cheesecake center sandwiched between layers of soft and chewy chocolate chip cookie dough. This decadent dessert is a perfect mix of textures, with the creamy filling complementing the rich, buttery cookie layers.

3 (8-ounce) packages cream cheese, softened
3 eggs
¾ cup sugar
1 teaspoon vanilla extract
2 (16.5-ounce) rolls refrigerated chocolate chip cookie dough


Instructions

Preheat the oven to 350°F (175°C). Grease a 9- x 13-inch glass baking dish with cooking spray.
In a large bowl, beat together the cream cheese, eggs, sugar, and vanilla extract until well mixed. Set aside.
Slice the cookie dough rolls into ¼-inch-thick slices. Arrange the slices from one roll on the bottom of the prepared baking dish, pressing them together to form an even layer without gaps.
Spoon the cream cheese mixture evenly over the dough. Top with the remaining cookie dough slices, placing them evenly over the cream cheese layer.
Bake for 45-50 minutes, or until the top is golden and the center is slightly firm.
Remove from the oven and let cool. Refrigerate until well chilled, then cut into bars before serving.
