1 (4 oz.) bar semi-sweet baking chocolate
1/2 cup unsalted butter
1 cup granulated sugar
2 large eggs
1 pie crust (for a bottom-crust-only pie)
Whipped cream for serving (optional)
Instructions
Prepare the pie crust: Lightly spray an 8-inch pie plate with non-stick cooking spray. Fit the pie crust into the bottom and up the sides of the pie plate. Set aside.
Melt the butter and chocolate: In a small saucepan, melt the butter and semi-sweet chocolate together over very low heat, stirring frequently. Once melted, remove from heat and stir in the sugar until fully combined. Let the mixture cool for about 3 minutes.
Whisk the eggs: In a mixing bowl, lightly beat the eggs with a fork or whisk. Gradually add the chocolate mixture to the eggs, whisking until smooth and well combined.
Bake: Pour the chocolate filling into the prepared pie crust. Bake on the bottom oven rack at 350°F (175°C) for 30 minutes. Move the pie to the top oven rack and bake for an additional 10 minutes.
Cool and serve: Allow the pie to cool to room temperature before serving. Top with a dollop of whipped cream, if desired.
