Ingredients
For Chocolate Cookie Crust
2 cups Oreo cookie crumbs
5 tablespoons unsalted butter, melted
For Chocolate Cream Filling
1 cup heavy whipping cream, cold
2 tablespoons powdered sugar
5 ounces semi-sweet chocolate chips (or chopped chocolate bar)
4 tablespoons (57 g) unsalted butter
6 ounces full fat cream cheese, room temperature
1 1/2 cups (180 g) powdered sugar, sifted
1/3 cup (35 g) unsweetened cocoa powder, sifted (Hershey’s Special Dark recommended)
2 teaspoons vanilla
1/2 teaspoon salt
For Whipped Cream Topping
1 cup heavy whipping cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla
Shaved chocolate for topping, if desired
Instructions
For Chocolate Cookie Crust
Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, allowing overhang for easy removal.
Pulse approximately 20 Oreo cookies (filling removed) to fine crumbs. Mix with melted butter and press into the pan. Bake for 10 minutes.
For Chocolate Cream Filling
Melt butter and chocolate over a double boiler, cool slightly. Whip 1 cup heavy cream with powdered sugar to firm peaks. Mix cream cheese, powdered sugar, cocoa, vanilla, and salt until smooth.
Combine melted chocolate with cream cheese mixture. Fold in whipped cream. Spread over crust and chill for 3 hours or overnight.
For Whipped Cream Topping
Whip cream, powdered sugar, and vanilla to firm peaks. Spread over chilled filling. Garnish with chocolate shavings.
