Ingredients

For the Chocolate Cupcakes:

  • 35g dark chocolate
  • 60g butter
  • 3 eggs
  • 50g acacia honey
  • 80g granulated sugar
  • 50g almond powder
  • 80g flour
  • 15g unsweetened cocoa powder
  • 4g baking powder
  • 80g whole liquid cream
  • 80g chocolate chips

For the White Chocolate Ganache:

  • 340g whole liquid cream
  • 160g white chocolate

Directions

1. Preheat and Prepare:

  • Preheat your oven to 165°C (329°F).
  • Line a muffin pan with paper cups to get ready for the batter.

2. Melt the Chocolate and Butter:

  • In a bain-marie or microwave (at 500W, stirring every 30 seconds), melt the dark chocolate and butter together.
  • Once melted, set it aside to cool.

3. Mix the Wet Ingredients:

  • In a bowl, whisk together the eggs, acacia honey, and granulated sugar for one minute until well combined.

4. Combine the Dry Ingredients:

  • In a separate bowl, mix together the flour, almond powder, unsweetened cocoa powder, baking powder, and chocolate chips.

5. Create the Batter:

  • Gently fold the dry ingredient mixture into the egg mixture.
  • Stir in the whole liquid cream, followed by the cooled chocolate-butter mixture, ensuring everything is well incorporated.

6. Bake the Cupcakes:

  • Pour the batter into the lined muffin pan, filling each cup about two-thirds full.
  • Bake in the preheated oven for 15-18 minutes. To check for doneness, insert a knife into the center of a cupcake; it should come out clean.
  • Allow the cupcakes to cool on a rack. If necessary, trim the tops of the cupcakes to create a flat surface for the ganache.

7. Prepare the White Chocolate Ganache:

  • Heat the whole liquid cream in a saucepan until it begins to simmer.
  • Pour the hot cream over the white chocolate in a heatproof bowl, letting it sit for a minute before stirring until smooth.
