Ingredients
6 tablespoons butter, cubed
1–1/2 cups packed brown sugar
2 tablespoons water
2 cups semisweet chocolate chips
2 large eggs, room temperature
1 teaspoon vanilla extract
2–1/2 cups all-purpose flour
1–1/2 teaspoons baking soda
1 teaspoon salt
Filling:
2–1/2 cups confectioners’ sugar
1/4 cup butter, softened
3 tablespoons 2% milk
1/2 teaspoon peppermint extract
Dash salt
3 drops green food coloring, optional
Instructions
Preheat oven to 350°F (175°C).
In a small saucepan, combine butter, brown sugar, water, and chocolate chips. Cook and stir over low heat until chips are melted. Cool.
Beat in eggs and vanilla. Combine flour, baking soda, and salt; gradually add to chocolate mixture.
Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake until firm, 10-12 minutes. Remove to wire racks to cool.
In a large bowl, combine confectioners’ sugar, butter, milk, extract, salt, and, if desired, food coloring until smooth.
Spread on the bottoms of half of the cookies; top with remaining cookies.
