  • 1 cup (2 sticks) unsalted butter, cubed
  • 2 1/2 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • 1 cup light brown sugar, packed
  • 1/3 cup granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract

Instructions

  1. Make the Toffee: Preheat the oven, prepare the toffee mixture, pour over saltines, bake, add chocolate chips, sprinkle sea salt, and freeze.
  2. Brown the Butter: Melt butter until golden brown and nutty, then let it cool.
  3. Prepare the Cookie Dough: Whisk flour and baking soda, combine browned butter with sugars, eggs, and vanilla, mix with flour, and freeze.
  4. Add Toffee to Dough: Chop frozen toffee, stir into cookie dough, reserve some for topping, and chill.
  5. Bake the Cookies: Preheat oven, line baking sheet, scoop dough onto sheet, bake, press reserved toffee bits, and cool on a rack.
