Description

These Cider Pumpkin Waffles with Salted Maple Butter combine the best flavors of fall into a delicious breakfast treat. The rich pumpkin puree and spiced apple cider add a warm and cozy depth, while the crispy waffles provide the perfect contrast to the buttery, salty-sweet maple topping. It’s a brunch dish that feels both comforting and indulgent.

Ingredients

Scale

6 tablespoons salted butter
1 cup pumpkin puree
1 1/2 cups spiced apple cider
2 large eggs
2 tablespoons pure maple syrup
2 teaspoons vanilla extract
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/2 teaspoon kosher salt
Salted Maple Butter:
6 tablespoons salted butter
1/2 cup maple syrup
1 pinch flaky sea salt

Instructions

In a medium pot, melt 6 tablespoons of salted butter over medium heat. Cook for 2-3 minutes until the butter begins to brown and smells nutty. Remove from heat and transfer to a large mixing bowl.
Whisk in pumpkin puree, spiced cider, eggs, maple syrup, and vanilla extract until smooth.
Add flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and kosher salt. Stir until the ingredients are just combined; the batter may have a few lumps. Let the batter rest for 10 minutes.
While the batter rests, prepare the salted maple butter by combining butter, maple syrup, and flaky sea salt in a small bowl. Stir until smooth.
Preheat your waffle iron according to the manufacturer’s instructions.
Pour the batter into the waffle iron and cook the waffles until golden and crisp.
Serve the waffles warm, topped with salted maple butter and a drizzle of extra maple syrup if desired.
