  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup honey
  • 2 tablespoons butter, melted
  • 1 tablespoon milk
  • 1/4 teaspoon cinnamon

Instructions

  1. Prepare the Cinnamon Roll Crust: Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan. Roll out the cinnamon roll dough, flatten the rolls, mix melted butter, brown sugar, and cinnamon, pour over dough, bake for 15-20 minutes.
  2. Make the Cheesecake Filling: Beat cream cheese, sugar, vanilla extract until smooth. Add eggs one at a time, mix well. Stir in sour cream. Pour over crust in pan.
  3. Bake the Cheesecake: Bake at 325°F (163°C) for 50-60 minutes. Cool in the oven for 1 hour.
  4. Prepare the Honeybun Topping: Mix honey, melted butter, milk, and cinnamon. Pour over cooled cheesecake.
