For the Pancakes:
1 ¼ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup milk (may need more if batter is too thick)
1 tablespoon vegetable oil
1 large egg, beaten
Alternatively, use a pancake mix like Bisquick (prepared according to package instructions)
For the Cinnamon Filling:
⅓ cup butter, melted
¾ cup packed brown sugar
1 tablespoon ground cinnamon
For the Cream Cheese Glaze:
4 tablespoons butter
2 ounces cream cheese
1 ¼ cups powdered sugar
1 teaspoon vanilla extract


Instructions

Prepare the Cinnamon Filling: In a medium bowl, mix together the melted butter, brown sugar, and cinnamon. Scoop the mixture into a small ziplock bag and let it rest for 10-15 minutes to thicken slightly.
Make the Pancake Batter: In a medium bowl, whisk together the flour, baking powder, and salt. Stir in the milk, oil, and beaten egg, mixing just until moistened (a few lumps are okay). If using a pancake mix, follow the package directions.
Prepare the Cream Cheese Glaze: In a microwave-safe bowl, melt the butter and cream cheese together. Whisk until smooth, then stir in the powdered sugar and vanilla extract. Set aside.
Cook the Pancakes: Heat a large skillet or griddle over low heat and spray with non-stick cooking spray. Pour about ½ cup of pancake batter onto the skillet.
Snip the corner of the ziplock bag with the cinnamon filling and squeeze a spiral onto the top of the pancake batter.
When bubbles appear on the surface of the pancake, carefully flip it with a spatula and cook for 1-2 minutes more, until the underside is golden brown. Transfer the pancake to a baking sheet and keep it warm in the oven while you cook the remaining pancakes.
Serve: When ready to serve, spoon the warm cream cheese glaze over the pancakes and enjoy!
