Instructions

  1. Preparation of the Oven and Pan Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by inserting paper liners or by lightly greasing the muffin cups.
  2. Mixing Dry Ingredients In a large bowl, combine 2 cups of flour, 1 cup of sugar, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1 teaspoon of cinnamon. Whisk these together until the mixture is uniform.
  3. Combining Wet Ingredients In a separate bowl, whisk together 1/2 cup of milk, 1/4 cup of melted butter, 1/4 cup of vegetable oil, 2 large eggs, and 1 teaspoon of vanilla extract.
  4. Creating the Batter Pour the wet mixture into the bowl of dry ingredients and stir until just combined. It’s perfectly fine if the batter is slightly lumpy.
  5. Filling the Muffin Cups Evenly distribute the batter among the muffin cups, filling each about three-quarters full.
  6. Baking Place the filled muffin tin in the oven and bake for 20-25 minutes. Check doneness by inserting a toothpick into the center of a muffin; it should come out clean.
