1 ½ cups sushi rice
2 ¼ cups water
2 tablespoons seasoned rice vinegar
1 teaspoon salt
1 teaspoon sugar
1 avocado
½ English cucumber
8 ounces imitation crab, log/leg style
4 sheets toasted nori seaweed


Instructions

Rinse the sushi rice in a colander.
Combine rice and water in a pot with a lid, bring to a boil on high heat, then reduce to low and cook covered for 15 minutes.
Mix rice vinegar, sugar, and salt in a small bowl until dissolved.
Once rice is cooked, spread it on a sheet pan, sprinkle with vinegar mixture, and toss to coat. Spread out to cool for 10 minutes.
Prepare fillings: slice avocado and cucumber into thin strips.
Set up a sushi rolling station with a sushi mat, water bowl for fingers, and a sharp knife.
Place a sheet of nori on the mat, shiny side down. Spread 1 cup of rice onto the nori, leaving a strip at the top uncovered.
Add fillings and roll tightly using the mat. Slice with a wet knife.
